Ingredients
- 4 salmon fillets (6 oz each), skin-on
- 4 tbsp Saucrs! Basil Pesto
- 3 tbsp capers, drained and patted dry
- 2 tbsp olive oil (divided)
- 2 tbsp unsalted butter
- 1 lemon, zested and juiced
- Salt and pepper to taste
- Fresh dill or basil, for garnish
Instructions
- Prep the salmon — Preheat oven to 400°F. Pat salmon fillets dry and season with salt and pepper. Spread 1 tbsp Saucrs! Basil Pesto over the top of each fillet.
- Roast — Place salmon on a lightly oiled baking sheet, pesto-side up. Roast for 12–15 minutes until cooked through and the pesto is set and fragrant.
- Crisp the capers — While salmon roasts, heat 1 tbsp olive oil in a small skillet over medium-high heat. Add capers and fry for 2–3 minutes until crispy and golden. Drain on paper towels.
- Make the lemon butter — In the same pan, melt butter over low heat. Add lemon juice and zest, swirl to combine.
- Serve — Plate salmon, drizzle with lemon butter, scatter crispy capers on top, and garnish with fresh dill or basil.
