Lamb and chimichurri are a natural pairing — but swap in Saucrs! Red Chimichurri and you get a deeper, smokier flavor that stands up beautifully to the richness of the meat. Paired with a quick mint yogurt, this dish looks like a restaurant plate with weeknight effort.

Ingredients
- 8 lamb loin or rib chops
- 3 tbsp Saucrs! Red Chimichurri (plus more for serving)
- 1 tbsp olive oil
- Salt and pepper to taste
Mint Yogurt
- ½ cup plain Greek yogurt
- 2 tbsp fresh mint, finely chopped
- 1 tsp lemon juice
- Pinch of salt
Instructions
- Make the mint yogurt — Stir together Greek yogurt, fresh mint, lemon juice, and salt. Refrigerate until ready to serve.
- Season the chops — Pat lamb chops dry, season generously with salt and pepper, then coat with 2 tbsp Saucrs! Red Chimichurri.
- Sear — Heat olive oil in a cast iron skillet over high heat until smoking. Sear chops 3–4 minutes per side for medium-rare (internal temp 130–135°F). Rest for 5 minutes.
- Serve — Plate chops over a swoosh of mint yogurt, spoon over extra red chimichurri, and serve immediately.
