Lamb and chimichurri are a natural pairing — but swap in Saucrs! Red Chimichurri and you get a deeper, smokier flavor that stands up beautifully to the richness of the meat. Paired with a quick mint yogurt, this dish looks like a restaurant plate with weeknight effort.

Ingredients

  • 8 lamb loin or rib chops
  • 3 tbsp Saucrs! Red Chimichurri (plus more for serving)
  • 1 tbsp olive oil
  • Salt and pepper to taste

Mint Yogurt

  • ½ cup plain Greek yogurt
  • 2 tbsp fresh mint, finely chopped
  • 1 tsp lemon juice
  • Pinch of salt

Instructions

  1. Make the mint yogurt — Stir together Greek yogurt, fresh mint, lemon juice, and salt. Refrigerate until ready to serve.
  2. Season the chops — Pat lamb chops dry, season generously with salt and pepper, then coat with 2 tbsp Saucrs! Red Chimichurri.
  3. Sear — Heat olive oil in a cast iron skillet over high heat until smoking. Sear chops 3–4 minutes per side for medium-rare (internal temp 130–135°F). Rest for 5 minutes.
  4. Serve — Plate chops over a swoosh of mint yogurt, spoon over extra red chimichurri, and serve immediately.
