Grain bowls are only as good as their sauce — and this one has Saucrs! Chimichurri doing all the heavy lifting. Nutty farro, caramelized roasted vegetables, and a jammy soft-boiled egg come together in a bowl that works for lunch, dinner, or meal prep all week long.

Ingredients
- 1 cup farro, cooked according to package directions
- 1 zucchini, sliced into half-moons
- 1 cup cherry tomatoes
- 1 red bell pepper, chopped
- 2 tbsp olive oil
- Salt and pepper to taste
- 2 eggs
- 4 tbsp Saucrs! Chimichurri
- Optional: crumbled feta, toasted pepitas
Instructions
- Roast the veggies — Toss zucchini, cherry tomatoes, and bell pepper with olive oil, salt, and pepper. Spread on a baking sheet and roast at 400°F for 20–25 minutes until caramelized.
- Cook the farro — Prepare farro according to package directions. Season lightly with salt.
- Soft-boil the eggs — Bring a small pot of water to a boil. Gently lower in eggs and cook for exactly 7 minutes. Transfer to an ice bath, peel, and halve.
- Assemble — Divide farro between two bowls. Top with roasted veggies and a halved soft-boiled egg.
- Finish — Spoon 2 tbsp Saucrs! Chimichurri over each bowl. Top with feta and pepitas if using.
